Butter poached Durade with a fennel and nectarine relish, roasted fingerling potatoes and frisse tossed in lemon juice and olive oil.
My dish... Braised kurobuta pork cheek over truffel cream corn with garlic kale and nectarine marmalade. (nectarines are carmelized in a port gastrique with onions and sage)
Chicken breast roasted in nectarine preserves diced and wrapped in pastry crust baked and served with a chipotle mayo.

Large prawns, stuffed with caramelized spring onions cream cheese and chilly peppers drizzled with olive oil and rosemary. Dessert is spring onion dipped in dark chocolate, coated with panco crumbs and fried served with a bit of raspberry mousse.

Ohh I almost forgot

The last one My brother sent me was a three course menu with grapes so todays game is one dish with Spring Onions!

The Game.......

I am a Sous Chef and have worked in restaurants since 1991. A game I have played at many of those places to pass the time and exercise creativity was to pick an ingredient for the day then come up with the hottest dish you can think of and discuses them. It is fun and I still remember a couple of great plates from this game. My brother just started cooking and has taken to texting me his Secret Ingredient of the day (he loves Iron Chef) and we talk about it. This inspired me to start texting my friends the ingredient and seeing where it goes. the one rule is that the next ingredient has to start with the last letter of the previous ingredient and it is chosen by the first person with a complete dish to offer.
